I am delivering dinner to some families that just had babies. I made chicken in a sauce and rice, and a green salad. Dessert is pound cake and strawberries and whipped cream. Should I add bread or a veg? I feel like a plate of rice with chicken on top and salad is not enough.
I think you are good. I guess when I serve salad I always consider it the veggie portion of the meal. In my house by the time we get through salad (which I do load with chopped veggies) we're on veggie burnout.
And I remember both times after I had kids, all I wanted was carbs and protein for like 3 weeks straight. It took me a long time to stomach fruits and veggies again.
