I love kale. Three of our favorite ways to eat it:
1. Sauteed in olive oil, then combined with cooked quinoa, drained garbanzo beans, lemon juice, cumin, garlic, paprika. 2. Massaged with a little oil (not much or it'll get mushy) to break it down, then dressed with apple cider vinegar (or white balsamic), a drizzle of honey or agave, and whatever fruit, cheese, seeds, nuts you have available. 3. Spritzed or tossed with a very light amount of oil, then *lightly* salted and baked at 350 for 8-10min until just crisp.
