I need some new recipes for my crock pot since the summer is here. I hate turning on the oven in the summer, lol. We eat a lot of chicken breast and center cut pork.
My friend makes pulled beef that is so good. I'm going to make it next time. I usually do pork too and this may be just as good with pork. She used a bottom round, 2 bottles of beer, (whatever's on hand, the time I tried it she used Natty Light!), an entire jar of pepperocinis, and a packet of Italian dressing seasoning. Serve on thick hoagie rolls. Yum!
I just made this yesterday (chicken with wine and mushrooms). I've made it before and it's tasty, but yesterday's batch wasn't so great because I used a wine that I don't like. Normally I use the white cooking wine from the supermarket and it comes out well: iwasborntocook.com/back-to-school/
We had pulled pork earlier this week ... pork shoulder pieces, spices (cumin, garlic powder, onion powder, a little cayenne and cinnamon and cloves, salt and pepper), and some cola. Once it was done I pulled it, added barbecue sauce, and served it on potato rolls with cole slaw.
I want to try a whole chicken in the crockpot but I haven't gotten around to it yet.

1 lb chicken 1 15oz can of corn (rinsed and drained) 1 15oz can of balck beans (rinsed and drained) 1 container of salsa (I use the garden fresh brand and only use about 3/4 of the container)
Cook on low for 8 hours. Shred the chicken with 2 forks. You can serve it on tortillas, over rice, in lettuce wraps or taco shells.
I have also added a brick of cream cheese in the last half hour of cooking.

I was going to recommend this! We call it fiesta chicken. We usually melt cheese on top and eat it alone or over rice.
I also really love BBQ chicken in the crockpot (I use the dr pepper BBQ sauce!).
Last night, I cut up some chicken breasts in to cubes, seasoned them, and threw them in the crockpot for about 30-40 minutes. Then, I added teriyaki sauce and broccoli and let it simmer for another 20 minutes, then served it over rice. It was like homemade Chinese food.
I usually throw a pot roast, a pork roast or chicken breasts in with either a large can of Rotel, a can of enchilada sauce or a couple cans of regular Coke and calling it shredded tacos or in the case of the Coke, shredded bbq sandwiches. Easy breezy and so tasty. I'm also supremely lazy and use the liners so that clean up takes 5 seconds. One of my fave recipes evvvver. I'm trying to write it from memory, but I make it about every other week, so it should be pretty accurate.
Crockpot chicken tikka masala:
2 lbs boneless skinless thighs 28 oz can crushed tomatoes 1 onion, diced 2-ish big garlic cloves, minced 1 tbsp grated/minced ginger 2 tbsp garam masala 1 tsp cumin 1 tsp coriander 1+ tsp salt (to taste)
Combine it all and cook on low for 6-ish hours. The chicken is fall-apart tender and sooo flavorful. I serve with basmati rice and peas. Huge hit with my fam, even the kids.

1 pork tenderloin cut into quarters. About 2 cups of bbq sauce, give or take. 1/2 onion chopped up into half moons. a couple of splashes of vinegar. some squeezes of mustard. a little bit of coke or root beer or dr pepper if you're into that.
cook that shit, then shred it with two forks. Put on a bun. Eat. Praise baby jesus for the deliciousness.

2-3lb boneless pork blade 1 yellow onion, rough chop Can of regular coke Splash of OJ Cook on high for 6-8 hours. Remove from crockpot, shred, stir in sauce.
Sauce 1/2 can stewed tomatoes 2 chipotle peppers in adobo sauce Salt/pepper Dash of cumin Blend until even
I use this in tacos/taco salads/sandwiches. SO incredibly good.

Pulled BBQ chicken: 4-6 Chicken breasts, 1 bottle of BBQ sauce, 1 bottle of beer
Salsa chicken (we eat this as tacos, quesadillas, and over rice): 4-6 Chicken breasts, 1 jar of salsa, 1 can of black beans (drained and rinsed), 1/2 bag of frozen corn
Super easy and they make meals for the week or enough to freeze.

Sweet and sour meatballs 1 lb ground beef 1 egg 1 medium onion 1 c bread crumbs salt pepper 1/2 c rice vinegar 1/2 c ketchup 1/2 c brown sugar 15 oz pineapple chunks with juice 2 Tbs soy sauce 1 medium red bell pepper 1 medium green bell pepper 2 Tbs cornstarch 1/4 c water
Mix beef, egg, onion, bread crumbs and form into meatballs. Put on cookie sheet and into freezer for 10 minutes. When they are frozen put them in large freezer ziploc bag.
Mix rice vinegar, ketchup, brown sugar, pineapple and soy sauce. Put sauce in a large freezer ziploc bag.
Cut up bell peppers and put into freezer bag.
Mix cornstarch and water and out in small bag.
When you're ready to cook it, defrost the bell peppers and sauce bags. Keep the meatballs frozen when you put them in the slow cooker. Mix the cornstarch mixture with the sauce. Put everything together in the slow cooker and cook on high for 4 hours.
