I use the Banana Banana Bread recipe from allrecipes all the time but today when I mashed my 3 bananas they were so small that they only gave me about half the yield they usually do, so I added most of a can of pumpkin. Then I decided that it probably needed spices so I added lots of ginger and cinnamon a little clove and the rest of the tiny bit of vanilla I had. THEN I decided pecan goes with pumpkin and I had pecans leftover from when I made Brian's nasty sweet potato casserole for Thanksgiving. In the bag with the pecans was the coconut and I was all "what the heck". OMG YUM! Highly recommend. It was supposed to be for Brian to have for breakfast on Fathers Day but it might not make it!! I better put it away right now.
