This is my favorite buttermilk biscuit recipe (from the blog "Brown Eyed Baker"). Last time I made them for shortcakes I sprinkled some coarse sugar on top before baking.
No berries, but I make this frequently with extra buttermilk. I have made it into both a loaf and muffins and it works equally well. Muffins cook a bit quicker!
Buttermilk Cinnamon Bread 2 cups flour 1 tsp baking soda ½ tsp salt ¼ cup veg oil 1 ¼ cups sugar 1 cup buttermilk 1 egg ½ tbls cinnamon
Directions: In a large mixing bowl whisk together flour, baking soda and salt.
In a small bowl, combine oil and 1 cup sugar. Add buttermilk and eggs to sugar mixture, mix well. Stir into dry ingredients just until moistened. Fill greased loaf pan 1/3 full. Combine cinnamon and remaining sugar and sprinkle half over the batter. Top with remaining batter and cinnamon sugar. Swirl batter with a knife.
Bake at 350 degrees for 45-55 minutes until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before moving to a wire rack.
