I made chocolate cupcakes for my DH's birthday. I am going to make buttercream frosting this afternoon. He is going to take the rest to work tomorrow. Should I leave them in the fridge overnight? Does buttercream go bad if you leave it out?
Do not put them in the fridge. Cake in the fridge is blasphemy. They should be okay out for a few days. If you must keep them somewhere it is best to put them in the microwave or the freezer.
Your frosting will be fine at room temperature. After a week, the only thing that might deter me is a sniff test and even then, I'd probably still eat them. Overnight will not be an issue.
Butter can stay at room temperature for days before it goes bad. And there is so little milk in frosting I wouldn't even think twice about leaving them out. If your kitchen is unusually warm, though, I would find somewhere else to put them because buttercream will melt.
