I'm trying to think of what to make for dinner. Its been so hot that I don't want to make anything with the oven on and nothing too heavy.
What are some good recipes that do not center around pasta/rice/quinoa? They don't have to be cold, just nothing heavy (allrecipes keeps giving me curries and stuff). I'd prefer veggies, but I can do some meat.
When it's hot, we do a big "salad" regularly with heirloom tomatoes, roasted bell peppers, avocado, fresh mozzerella, fresh basil and a balsamic dressing, served with a big loaf of French bread.

Or a big pasta salad.
Salad might work... I just need to think of a way to make it more main course for GG. She sees salad as a starter, not the meal itself.
Pasta salad is out because of the carbs for me. I have not found a pasta I can eat much of and keep my sugars under control.
Grrr its so much easier when I can cook whatever I want. Stupid health and a suddenly picky family.

A black bean salad is good and light. I usually serve it with tortillas. I just use 2 cans black beans, chopped bell pepper, corn, red onion, and 1-2 avocados, and some chopped romaine lettuce and then make a light dressing with lime, olive oil, garlic and cayenne if you like spice.

That sounds promising! I'm thinking of pairing it with gazpacho.
We had caprese salad (cubed mozzarella, tomatoes, basil and olive oil). I had mine on a bed of arugula with balsamic vinegar and H had his on some toast. Perfect light summer dinner and no cooking (except the toast)
