What's in your box, or what did you buy? What do you plan on doing with it?
We got peaches, cherries, grape tomatoes, new potatoes, yellow squash, Romaine, a red onion, cabbage, and a cucumber. We also got eggs, sausage, ground beef, and half a chicken. We still have beets, broccoli, a ton of lettuce, more peaches, and a head of cauliflour left over from last week. AHHHHH!
Cherries are my afternoon snack today. ;D The cauliflower, onion, and potentially potatoes will get used up in either this or this for brunch on Sunday. Some of the peaches are going in a peach bourbon pecan pie for a friend's birthday on Sunday. We'll roast or grill the broccoli. I might stuff the yellow squash with an Asian-flavored ground beef and cabbage mixture. Cucumber, cauliflower, and tomatoes might become crudites. Still figuring out the beets and lettuce.
Yeah...lettuce is the only thing I can't figure out how to preserve in any way. I always just try to be really dedicated to eating salads if I have a lot of lettuce.
Do you like pickled red beets? I just did that the other day.
My husband likes to make red beet eggs (combined peeled hard boiled eggs in a jar with the red beets and their pickling liquid - add vinegar and / or water and / or sugar depending on how "vinegary" and sweet you want them).
Otherwise sometimes I slice them and add them to a salad.

I've found that if I take it all apart, wash it, pat it dry and then put it in tupperware it lasts me over a week, sometimes the full two (we only get ours every other week). I do the same thing with many of the veggies now and it really helps them last! It also helps me eat it more often because there's less work involved later.
I got some rhubarb (and asparagus) from the farmer's market (I'm guessing this will be the last week for the rhubarb). I made this recipe from Girl and the Goat for Rhubarb, Asparagus, Goat cheese salad - so good! www.stephanieizard.com/recipes/asparagus_goat_cheese_and_rhubarb_salad

Got some cherries, sugar snap peas, zucchini, and bok choy at the farmer's market this morning, plus one pound of grass fed lean ground beef for only $5!. I'll use the peas and bok choy in stir fries, the zucchini and beef in meatloaf.
I also got an amazing deal on blueberries at Whole Foods yesterday- 4 pounds for $10! Will be making some smoothies this weekend

We got our first CSA farm share this week. It was a little light but that is usually the case in the beginning here in the Pac NW. We had rhubarb, strawberries, Swiss chard, fava beans, 2 popcorn husks, dried pinto beans, a yellow onion and a sunflower plant.
I bought some blueberries at WF and got some more frozen berries out of the freezer to make a rhubarb, berry crisp
