One of our good friends is carrying twins and was put on bed rest yesterday. I want to make her some freezer meals to help ease the dinner burden and was planning on doing lasagna and some stuffed shells but found out she's having some pasta aversions so I need some other ideas. I am going to do enchiladas and take some stuff for crockpot meals but am kind of stumped for what else I can do. Ideas??
I know you said dinner but people never seem to think of breakfast in these situations and when I was pregnant I couldn't deal with heavy meals. I'd make up freezer packets for smoothies - there are lots of ideas on Pinterest. Muffins also freeze really well. I've seen it suggested before to get a ton of sandwich fixings and I think that is a great idea, as well.
I'm assuming she's on bed rest at home so she doesn't have any reheating limits? enchiladas are my go-to. Also breakfast burritos, cookie dough and muffins freeze very nicely
I'll brainstorm some ideas too, but I wanted ot mention - if she's having aversions, I'd avoid crock pot items until after pregnancy, unless you pre cook them and they only need oven or stove top reheating.
honestly, I try to do crock pot but I can't when I'm home and pg for the ease of it b/c OMG, the smells permeate the house all day long. It makes me more ill.
Is her h home in evenings? Marinate flank steak and freeze flat or marinate some chicken breasts, 2 in a pack. They can thaw in marinade and she won't have to open the packet to throw on the grill (if they have one). Vegetable steamer packs rock and Costco has "Seeds of Change" rice/quinoa mix packs that I enjoy when I'm too pukey or sick to cook.
Vegetable steamer bags and the grains can just be nuked, meat can be thrown on the grill, and you have a very fresh meal without having to touch and prepare food. (that is if she has assistance that way.) It's an easy meal, though.
I also like the breakfast idea. Does she like pancakes? You can pre cook a batch and freeze them and they nuke decently enough. It's just so nice to have easy food when you can't cook. It's hard b/c this time of year, you don't really want hot stuff all the time, but that's the great pre-made meal items. My mom just made us some lasagna, which is awesome to have in the freezer. Thank goodness I haven't had to do bedrest, but my constant puking really limits my cooking.
ALSO - can you assemble menus from restaurants nearby and investigate restaurant delivery options? Even if she has restaurant menus and can call in an order for her h to pick up on the way home if that works for them. We just moved to this area and I was actually just googling if I could get anyone to deliver tonight. I like browsing menus online but when i'm hungry, I'd rather just pull one out and physically look at it. Esp if you can pick a variety of food styles (pizza, chinese, thai, Indian, italian, etc etc etc). I'd love a folder like that. I wouldn't expect someone to give me a gift card for stuff w/ it, it'd just be awesome to have some quick easy dinner ideas on hand.
Brown hamburger, salt and pepper, spread in 9x13 top with green beans, mushroom soup, colby jack cheese and then tator tots. 350 until brown.
Enchilada soup from skinny taste
Meat balls/loaf
Twice baked potatoes
I love the twice baked potato idea. Potato is like a staple for many pg women. She can heat one up for lunch and some frozen peas to go w/ it or something. But you've taken tons of work out of it then.
I have been struggling w/ food this pg and trying to actually eat. I am a little embarrassed - I bought a scalloped potato frozen dish at the store. So easy to make myself, but I don't cook lately. :*( I'm sure it's overly salty, overly everything, but OMG, it's done and I only have to heat it. Not necessarily the healthiest but some food is better than none.
Food's really an issue for me lately. Bagels and cream cheese (I force the cream cheese). If you do sandwich fixings, avoid lunchmeat probably. Rotisserie chicken pulled apart so she doesn't have to touch it is nice. Chicken salad from rotisserie. Or if you want to pre-cook a crock pot meal, pulled beef or pork bbq would probably be good. Someone on here raved about a crock pot pork recipe. Was that montereybride? Like I mentioned before, if you can crock pot it and deliver it cooked, it might be nice b/c the cooking smell all day can drive a person insane when smell is heightened due to pg.
Pulled pork is amazing! I'm on my phone but the recipe I use is in several of my WFD posts. Or you can google it ... Kalua Pig and it's a nompaleo recipe.
