Ingredients 1 small red onion, cut into thin half moon slices 2 -3 limes, juice of 1/2 lb feta cheese, cut into 1 inch cubes 4 cups watermelon, cut into 1 inch cubes 1/2 cup pitted oil-cured black olive 1 cup whole flat leaf parsley 1/4 cup chopped fresh mint 3 tablespoons extra virgin olive oil 1/8 teaspoon fresh ground black pepper
Directions Place the onion slices in a small bowl, add the juices from the limes; set aside. In a large bowl, combine the feta cheese cubes with the watermelon cubes, the black olives, parsley, mint, olive oil, and pepper. Add the onion and lime juice mixture and gently toss to combine.
I wouldn't make this, but I would try it if someone else brought it. I don't think olives and fruit would mix well, but I love both, so I guess it would be worth a shot.

I had something very similar at a restaurant once and it was delicious. I would not take it to a potluck, though, because most people will think it's weird and not eat it.
I have seen this made and it does not look bad, I just don't know if I would like the combo.
I have made a pesto pasta salad and people loved it.
1 pound pasta i containor of buotoni pesto (or other brand you like or homemade) I can black olives cut up 1 quart of grape tomatoes cut up either mozzarella or feta cheese.
Keep chilled for awhile and add the cheese in the last hour or it will start to melt. lol
