We're leaving soon to check out a new orchard (well, new to us). I'm sure we'll come back with way more sweet cherries than we know what to do with. I've recently made a sweet cherry pie, sweet cherry jam, and I have a recipe I want to try for cherry shortcakes.
Anyone have any other favorite recipes I should try out with my fresh cherries?
Summer salad - 2 cups cherries (pitted and halved), 3 large peaches (pitted and sliced thin), 2 cups arugula (washed, dried and torn into bite size pieces), 2 cups romaine (washed, dried and torn into bite size pieces), 1/2 cup walnuts (toasted and chopped) and white wine vinaigrette. Mix all together and let sit for 15 minutes to let flavors meld. Serves 6.
