Do it. It's seriously so easy and so delicious. I get so many requests for it at summer parties. No one seems to get sick of it. I'm certainly not sick of it!

Do you mind sharing how you converted it to vegan? I tried the actual recipe and it was delicious and I want to eat it everyday for the rest of my life, but I try to abstain from eating dairy during the week and do it sparingly in weekends.

If you're just cutting out dairy: substitute the butter for earth balance margarine (I use the sticks when baking just for ease of measuring), replace the milk with whatever non dairy milk you feel like using (soy, almond, or rice) and you should be good to go. My vegan cupcake takes over the world book always has you add 1 tsp of apple cider vinegar to the milk and let it curdle before you add it to the batter - so I did that for this cake too (but with 1/2 tsp acv since it was only 1/2 cup of milk) - the cake tasted good but I don't know if this is a necessary step.
If you want to replace the egg as well - I used Ener-G egg replacement in this cake and it worked out great.

Nope, not written as vegan but still quite yummy.
I guess it might taste a smidgen different just because it is different ingredients but different isn't bad. It's quite awesome as I made it, tyvm. And no one would have known it was vegan if I hadn't told them.

I did the same with earth balance and soy milk and it was still delicious! I love being able to easily sub stuff out and still make "regular" recipes. I guess I'm just used to it, though.
