I'm making chicken enchilada casserole --layered corn tortillas with crockpot shredded chicken mix (shredded chicken breasts, enchilada sauce, greek yogurt,taco seasoning mix, sauteed onions with garlic all mixed up) layered with shredded cheese and more corn tortillas with enchilada sauce poured over it, more cheese and white onions on top. I totally pulled this out of my ass as I didn't want to go anywhere today so made do with what we have on hand.
I used Emeril's recipe. I cut it in half b/c it made 4 servings.
Basically you boil 1-2 lbs of spinach in salted water for 2 minutes. Then strain it good and chop it up.
Sautee 1/2 cup of shallots and minced garlic in 2Tbsp of butter. Then add in spinach, salt, pepper, nutmeg and 1/2 cup of heavy cream and let is cook for 4-5 minutes. It's a little more watery than it should be, maybe b/c I used half heavy cream and half FF half and half. lol. It still tastes really good!
