For those of you who don't finish the bottle, making frozen wine cubes is pretty awesome. A cube is about two tablespoons and you can defrost as necessary for recipes and sauces.

That would also be a classier way to chill my wine faster than plain ice cubes, which is what I do now. But like most everyone else, leftover wine is not a problem in my house.
