OMG my marshmallow frosting. So freakin easy and you can add flavors/colors if you want.
1/3 cup water and 1 cup sugar in a pan. Bring to a boil, stirring constantly. It will boil away and suddenly turn clear. Let boil 30 more seconds (still stirring constantly). In stand mixer, start to whip 2-3 egg whites (depending if your egg size, the recipe is pretty forgiving so not that big a deal). Slowly pour in hot sugar mixture. Keep whipping on high until frosting gets stiff peaks and cools down. This takes 7 min on my stand mixer, 10 with my cheapie €10 hand mixer. If using a stand, do not use splatter hood thingie. You can add flavor/color right after soft peak stage.
It's way cheaper than buttercream, but it isn't as dense so you can't pipe litte flowers and things with it. Kinda limited to big pillowy cloudy goodness, with added sprinkles (if you are so inclined).

This! Clogged once gave me this recipe and now I use it all the time. Its especially good for my son who can't have dairy.
