We're having "Friday Family Night" tonight. We've rented movies (since it's so awful and hot outside) and I was thinking about grilling pizza. But now pizza doesn't sound good. It might later?
Anyway, what are some other ideas? I was thinking about salads with grilled chicken, but now that doesn't sound good either. I have a feeling it's going to be one of those days when nothing sounds good.
I hate cooking when it's this hot. I refuse to turn on the oven because it takes our a/c hours to catch back up. I love BLTs, pasta salad, or green salads on these kinds of days.
I use my crockpot a lot during the summer. Throw in a roast (either pork or beef) and then either a can of enchilada sauce or Coke and then have shredded tacos or bbq sandwiches. Easy.
One of my favorite summertime meals is a salad with spinach, sliced strawberries, grilled chicken pieces, feta cheese, avocado pieces, and honey roasted sliced almonds. Mmmmm.

I just went grocery shopping and basically everything I'm planning in the coming week is crock potable.
This is one of my favorite quick, summer dinners: Zucchini and Bow Ties from Rachael Ray 365: No Repeats
Coarse Salt 1 pound bow-tie pasta 1/4 cup extra virgin olive oil 6 garlic cloves, minced 2 medium zucchini, cut into matchsticks Coarse black pepper 1 cup grated Parmigiano-Reggiano 1 cup fresh basil leaves, torn or shredded (20 leaves)
(I added 2 chicken breasts, cooked and diced)
Bring a large pot of water to a boil and salt it. Cook the bow ties al dente, with a bite. Heads up: You will need a couple of ladles of starchy cooking water.
Heat a large, deep skillet over medium heat. Add the EVOO and the garlic. Cook for 2 minutes, then add the zucchini. Cook gently for 8 to 10 minutes. Season with salt and pepper and add a couple of ladles of cooking water. Drain the pasta and add to the zucchini. Toss with the cheese and turn off the heat. Toss for 2 minutes, until the liquids are absorbed. Serve in shallow bowls with lots of shredded basil on top.

we have a cheaters pasta salad for days like today. cheese tortellini (fresh from deli aisle, boils in 6 minutes), jarred pesto sauce, halved cherry tomatoes & boccocini cheese. It takes maybe 12 minutes total to make and is delicious.
