I used to buy a lot from the farmers market when it looked good and slice it thing and fry it. Great to snack on and easy to garnish with a bunch of different things since eggplant is so versatile.
Ratatouille Also, you can slice paper thin, season and dehydrate in the oven and the eggplant gets kind of crunchy like chips (but not like chips because, well, it is eggplant. Still delicious, though)

I do eggplant boats with lots of veggies (including zucchini) or zucchini boats with eggplant stuffing.
I also just throw eggplants and zucchini in a pan with some olive oil and whatever veggies I have and cook it until they are nice and browned/slightly softened.
Eggplants and zucchinis are my go-to veggies most night.
