Potatoes, rice, quinoa and beans are all gluten free. You could make a salad with any of those and veggies with a mayo, vinegar, or lime juice based dressing. Gluten free pasta is pretty mainstream here. Have you tried looking in the Asian food section? Most rice noodles are GF.
I just made homemade pesto and spaghetti squash and it was a huge hit w/ my family. DH liked it w/ red sauce - you could do that too (I prefer pesto). I also just made GF blueberry muffins for my friend w/ celiac's. I have a whole pinterest board of ideas for food to make for her (she is about to have a baby and I'm doing a mealtrain thing for her) - do you have pinterest? Also a ton of mexican food is GF in general - you can make tamales, nachos (w/ corn chips), enchiladas, etc. Pozole is one of my favorite soups ever and it's very much GF.
This is always a huge hit with the GF crowd. I swap a cup of quinoa for faro, and use pumpkin seeds instead of nuts. I like the dressing better with a whole avocado. GL!!

We did steak, veggies (tossed in olive oil & Italian seasoning) and sweet potato slices on the grill when my gluten fiend was here. We also did rice crispies for desert.
