DS is turning 5 and wants a football theme. Party is at 1 and I know people will hang until 8 (It's just how my family is). I'm kind of thinking bar/appetizer/superbowl party food:
Nacho bar (chips, tortillas, chicken, beans, a couple salsa, sour cream, guacamole, lettuce, tomato) wings mozzarella sticks hanky panks (a gross mix of sausage and velveeta on top of party rye that turns magical under a broiler) veggies and pumpernickel with spinach dip
Football shaped chocolate rice krispie treats and cake
I feel like there should be something healthy, but can't think of anything. There are no vegetarians or allergies. The only kids under 8 are mine.

Meatballs can be healthy! Fruit salad? Fruit kebabs? I'd probably do sandwiches too. Everything you've listed feels like appetizers, so I can't imagine it sustaining people through 7 hours of partying.
I like the grilling or sub ideas. Cute theme though! The nacho bar sounds good. Perhaps you could do some of those shells that make a salad bowl so they could make taco salads?
I really want to avoid grilling. I was considering subs, but figured I eat tacos for dinner so a nacho bar would be the same thing. I'd have chicken and hamburger.
I agree with subs or pin wheels. You don't have to have all of the food out at the same time but maybe offer the sandwiches later in the afternoon. You could do meat and cheese trays for a build your own sandwhich too if you didn't want to order subs.

I am known for eating appetizers for a meal so it looks delicious to me! I agree that it's perfect for a 1 pm party but I would want something more if I was staying until 8.

That sounds good to me. Our family all lingered well past DS noon party, so we ordered pizza at 6.
If you want something light/healthy, I love this cowboy caviar recipe (I use black eyed peas instead of black beans) and it would fit with your nacho theme.
I guess I'll add some sort of sub. Usually we start at 1ish and have food out by 1:30. The kids play a bit then we do gifts and cake and ice cream. I try to have that done by 4 so people can leave and not miss anything. Generally after that we'll just pull the same food out again for whomever is hungry. I guess after 16 years of this it seems normal.

I think both nachos and wings count as main dishes, but you could easily set out taco shells instead of/in addition to chips and have a taco bar instead of a nacho bar.
I'd add a fruit either as salad or kebabs.
You could add something like a 7 layer dip, a various salads (corn salad, potato salad, green salad), or little smokies (served from a crockpot with the chili sauce and grape jelly mixture). Or pigs in a blanket.

I don't think you have to add subs if you aren't feeling it. You know your crowd. If that's the way things are usually done, I'm sure it will be fine. Like somebody said, you can always order a pizza or two if people linger and aren't satisfied with the options. I think it is different with family.
