I was first introduced to kale in 2009.
It's super good for your skin (and has other benefits) so I try to eat it weekly.
However, I hated kale up until this past year. I bascially forced myself to eat it. It was torture.
The key to use it in salads is to "massage it". It breaks it down a lot. I then use a homemade tahini dressing. With that, it's actually pretty delicious.
Food Network has a pretty good recipe using mangoes and some dressing using honey. Yum.

I make a really delicious creamy potato soup that has kale in it. I usually buy the stuff that's green & purple instead of just the plain green stuff. I don't know if it tastes any different, but I like how it looks.

I made some kale chips that sounded really awesome and super easy that I heard about on NPR: just drizzle with olive oil, mix to coat, sprinkle with kosher salt and bake in the oven at 275 until crispy. I was really looking forward to trying them, because I really want to expand my vegetable repertoire.
My house stank of cruciferous vegetables for days after. What good is crispy when it comes with a side of disgusting?
