I didn't realize until very recently that this is a regional thing. I'm getting lunch from the best pit beef place around. It's basically a little shed, with picnic tables in a parking lot. It looks totally sketchy, but the meat is AMAZING.

I was going to guess a BBQ/smoked beef of some sort. There was a BBQ and smoke pit near us in NC. I was skurred to try it, but it got rave reviews online. So I walked in (after deciding the building wasn't going to collapse if I opened the door, and there was literally writing/drawing/grafiti style art all over unfinished drywall walls. Like, no paint, plaster, just drywall, and a cafeteria style bbq line. I probably would have walked out if the sanitation score of 99% wasn't posted on the wall as well.
There is a farmers market near us and this one vendor who sells catfish sandwiches. He uses this huge cast iron griddle thing and never cleans it- only scrapes it off. It's the best sandwich ever. It's terrifying looking- like you wonder if you should take a precautionary dose of penicillin with it, but its so good. And I've never gotten sick from it. Yet.

I have to drive to Maryland for it, but yes, I've had it. The place I'm thinking of has different levels of doneness available, so I can get mine the way I want it. Now I want some.
