I paired it with roasted fennel and homemade peasant bread. Yum.
Another favorite at this time of year is tomato sandwiches: Good bread, lightly buttered layered with slices of tomato and sprinkled with salt and fresh ground pepper. I only have tomato sandwiches when I can pick my own tomatoes.
I also love a simple tomato pecan salad. Sliced tomatoes, toasted pecans, thinly sliced scallions tossed with balsamic vinaigrette.
I love slow roasting grape tomatoes with olive oil, salt pepper, Italian herbs and freeze them. I use them in pasta, pizza, all sorts of things.
This! So yummy, we had this for dinner last night over creamy polenta. I added garlic & shallots when roasting (at 400* for about 20-25 minutes). It keeps really well & is also super yummy over any kind of pasta or even over halibut.
Bruschetta - I pulse in my food processor: tomatoes, garlic, basil, salt, pepper, pine nuts & parmesan (plus usually a little lemon juice) & spoon over toasted baguette slices or grilled polenta rounds. I take this to potlucks a lot & it's always a big hit.
Salsa - this is great with fresh or roasted tomatoes.
Caprese skewers or salad. Depending on what size tomatoes. Little grape/pear/cherry on skewers with basil & fresh piccolini mozzarella, or large tomato slices layered with sliced fresh mozzarella & basil all drizzled with olive oil, salt, pepper & balsamic vinegar is one of my favorites!
