If you are flying into LAX as a connection you shouldnt have to deal with luggage IF you check them through to your final destination. Are you switching airlines?

We are, I figured they would check them but added that in there just in case.
This was us this past July while headed to Bora Bora. They would not check our luggage until 3 hours before, so we went to "Relax Lounge." You bring your luggage and you pay per 3 hours. They have comfy chairs/couches and free drinks/wine/beer/snacks, tvs, free wifi, etc. It was worth it.
I personally would not bother, but if you really feel up to it, it can be done.
There's a ton of oceanside restaurants that you can likely haul a cab to/from within that time frame. Here's a few:

This is if you do get in by 11am, get out of the LAX gate by noon, cab for an hour+, nosh/relax for 2 hours around 130-ish; then you can head back down by 4pm, but NO LATER than 5pm in order to check-in by 6pm. If you're leaving internationally, I would get to the gate earlier than an hour before the flight. LAX' security lines can take a while.
BUT the day of the week also matters, since 5-7pm is rush hour during M-F. LA traffic is famously bad, that area (West LA-South Bay) being one of the worst.
