What baked goods can I ship?

I'm doing the Dessert for the Deserving thing where you ship a baked good to someone who was nominated.

Unfortunately, they forgot to send me my person so the only person left was someone in the UK. All of my dreams of sending super cute cake pops went out the window. With that kind of ship time I really can't send anything with frosting.

Suggestions? I really wanted to avoid plain old cookies, but I'm not sure I really have any other options.

I'm doing DftD too!

I was part of a nationwide Christmas cookie swap, and made biscotti -- they held up really well to shipping.

Decorated sugar cookies would work, too.
