I take an empty Sigg bottle, which is metal and probably looks like some kind of bomb on an X-ray. Never had an issue.
The one time I did that, my bag got searched. I've switched to the devil's plastics for flights. My goal is to get through security with as little interaction as possible.
I think you can bring a full one through as long as you declare it and have a kid with you.
Empty should definitely not be an issue - I bring an empty water bottle every time I fly so I can fill it after security. Never had a problem.

The dumped ours when we flew out of Boston. TSA told us our child was too old for a sippy. He's JUST NOW getting off of sippys because of his oral motor skills.
DD is almost 3 but has longer hair and looks freakin old when her hair in fixed and she has cute clothes on.
It was surprisingly easy to take her through when she was 4 months old. I forgot about the baby food in the carry on and put ALL of her jars in there (not just the ones I wanted to take for the flight) but they didn't care cause they were new and sealed.
