We went a few years ago and loved it! The beaches are spectacular. We stayed T the Turks and Caicos Club, which has recently been sold and is now The Beach House. It was within walking distance of a great snorkeling reef and a beach bar called Somewhere which has amazing sunset views and fun sunset happy hours. We also did a snorkel conch trip with Caicos dream tours and a glo worm sunset sail. I'd recommend them both.
This is my blog post about our trip there a few years ago for a friend's wedding. They've done a good job of not letting it get too overdeveloped and tacky, so I think it's a good choice for a relaxing trip.

We stayed at Amanyara last July and are going back next month to do it again. Loved it. Absolutely beautiful location, service was impeccable and the trip was utterly relaxing. What we love about it most is that you aren't staying in a hotel, your room is an individual pavilion and you have complete privacy. It isn't a resort for everyone -- there are activities to do, but mostly you just have lots of quiet romantic time with your partner. Our idea of happiness
Another option - we stayed in a 1 bed villa with a pool at the far end of Grace Bay beach, right next to Smith's Reef (best walk in snorkeling on the island). We absolutely loved it - the place was gorgeous, the deck/pool are was so fun and private, and there were never many people around. Google Ballyhoo cottage, we had a really good experience with the villa company.

I definitely ditto the recommendation of doing an excursion with Caicos Dream Tours. We did the half-day snorkel trip and it was the highlight of our 4 days in T&C.
