My kid always gets sweaty, too. I just aim the middle vents back towards there (she's in the center) and keep the canopy up if the sun is on her. You could try getting those shade things for the windows, too.
I'm sure she's fine, though. Sweating means her body is keeping her cooled off.

I feel ya. 115+ here.. I feel so bad for the baby! I put her shade down on her seat and point the vents back at her on full blast so she can get as much air as possible.
Can you ask to shave 5-10 minutes off your lunch hour so you can leave early and get the car cooled down. Those temps sound miserable. Maybe those window shades would help?
Is there a fridge at work? I'd buy one of those chiller things, stash it in the fridge during the day then put it in her seat as you drive to daycare to cool it down.

This is what we do, whenever possible. I keep one of those breathable white Aden & Anais swaddle blankets over her car seat, both to reflect the sun and to soak up the condensation so she's not sitting in wet. I'll also try to bring her thermos sippy with ice water in it, to keep her cool like that.

I did think of the projectile aspect, which is why I said to secure it, instead of clipping it. That way it's no worse than a sunshade on the back window.
Can you run outside and turn your car on a few minutes before you leave? I don't know how far your parking lot is or if that would be something you're comfortable doing, but that would help. I did that at my parent's house the other day, but I wouldn't do it at work because our parking lot is not within viewing distance of where I sit.
I do the clip on fan until everyone is in the car and blow as much cold air back there as possible. Then I turn it off and leave the AC cranked with all of the vents blowing back there. I freeze, but it's comfy back there
