Monday - I took the kids to dinner since L had a board meeting at the kids' school. Tuesday - Pasta and hot dogs (L is going to the gym and I have to get home work and dinner done) Wednesday - Hummus crusted chicken (the adults/plain for the kids) with squash and zucchini Thursday - Honey mustard pork loin with roasted cauliflower and green beans Friday/Saturday/Sunday - out to dinner since my dad is going to be in town.
Enchiladas with black beans Tacos with rice,beans, sauteed zucchini and corn Honey garlic chicken with broccoli fritters Kid food night Pulled BBQ chicken,potatoes,garlic green beans

2brides, thanks for that link, I just printed it too. And I think E might try it as she likes hummus. We'll give it a go. I've been meaning to ask you about the roasted cauliflower you make. Do the boys eat it? Do you have a recipe? I recently started making roasted broccoli that E loves, so I was hoping this might be another we could try.

Kari - Grayson will try it, but Carter won't. Then again, Carter eats 3 things. I just put cut up cauliflower on a tray with sliced onions and a few cloves of garlic. I drizzle with olive oil and salt and put in at 425 for 45m - I toss it every 15m. Last week we added green beans to it and it was super good!

I made it last night. I liked it okay, but it was a bust with everyone in my house...even L who LOVES hummus. She said it was "fine" but doesn't want it again. It won't be back on our dinner rotation. I hope others have better luck!
ETA: I should also mention that L is a very very picky eater. So take this review with a huge grain of salt.
