Crudités/pitta chips with dips always go down well.
I copied our local indian restaurant dip the other day and it got wolfed down in no time by supposed veg haters: dice onion, tomatoes and cucumber (remove seeds of both so it's not too wet), add lots of chopped coriander, chopped fresh chili to taste, the tiniest baby drizzle of olive oil, salt & lots of pepper. Serve with pappadums or any sort of cracker/pita bread.
ETA: am on a "eat more veg" kick.
Also fast to go & easy: buy pre rolled pastry, cut in whatever shapes you fancy, put sundried tomato or fig or artichoke hearts in the middle and add a dollop of any cheese you fancy (I like blue with fig, gots with tomato and mozzarella with artichoke), close them up in little parcels, bake for what the packet says/until golden.
If there are any left, they're great cold or reaheated later: just plonk them in the oven or on the toaster rack for 2 minutes.
I'm a big fan of tortilla chips with a variety of dips (salsa, guac, bean and cheese dip, etc). Whatever you have leftover, you can use on taco night (okay, the guac doesn't keep, but I never have guac left over).

I have to recommend Egg Salad Sandwiches with the crusts cut off, sliced on the diagonal. Simplest thing in the world, very inexpensive and everyone (kids included!) gobble them up. It only takes chopped hard boiled eggs, mayo and a dash of Sweet Relish to make them yummy. A giant loaf of bread + 10 eggs = perfect appetizer.
We did a bunch of apps for new years including fillo dough or those won-ton wrappers. We made some with taco meat, some with green chili chicken and then some with cherry pie filling. Easy peasy. I will second the little smokies in croissant dough, and the meatballs in bbq, red sauce, or the grape jelly ones. OMG yum.

We just had a party for my DDs' birthdays...10 adults, 6 kids ages 7 - 14. The apps that went over best were chips with guacamole and salsa, candy (M&Ms and candy corn), and a veggie tray with dip I threw together in about 5 minutes that morning. Everything was super easy and the guests enjoyed eating it.
Yes. I've never had any of this left over and we make it all the time (on the stove/in the oven, though, not in the crockpot).
I've only ever had it once and it was baked in the oven in a 9x13 pan. So good! I would serve it with pita wedges instead of (or in addition to) tortilla chips.
I do it in the crockpot so it stays warm and serve it with celery sticks, carrots and Stacy's Pita Chips.

Chicken wings are always gone in seconds at my house. I cook them really low, like 325 for 2-3 hours. I add low sodium soy sauce, brown sugar, garlic powder, salt, and pepper. Then I mix every 30 mins or so. They fall off the bone and people love them.
I do 2 variations of taco dip, too. One with cream cheese on the bottom, then topped with ground (beef, pork, chicken) cooked with taco seasoning and 1 jar of salsa, then I add mexican shredded cheese on top OR I mix 8 oz cream cheese, 8 oz sour cream, and 1 16 oz jar of salsa, and a taco seasoning packet with an electric mixer. Then top with shredded iceberg lettuce, chopped tomatoes, and shredded mexican cheese.
