Tacos. Nothing fancy Last night was a tenderloin steak with asparagus though.
Are you looking to change the chili up? Cover a hot dog or a potato with it. Or add a heavy dollop of sour cream, or some mushed avocado. Or make it into nachos?
Burritos with shredded chicken, avocado, red onion, lettuce, black olives and salsa. I have two boxes of artichoke hearts in the oven to go with it.
Ooh, what do you do with the artichoke hearts? Just roast them?
Yes! I put some olive oil, salt, pepper, garlic powder. If I have a lemon, I'll zest it and add the juice as well. Then roast 400 until they're done. I like mine brown and crispy so it takes at least 40 minutes when they're frozen.
I would eat these every night but they are $4 a box. My side cost four times more than my main dish, lol.

Recipe from Pinterest. 4 boneless/skinless chicken breasts. 4 minced garlic cloves. 1 tbsp olive oil. 4 tbsp brown sugar. Salt & Pepper. Preheat oven to 450. Spray baking pan or line with foil (and spray).
Saute garlic in olive oil. Remove from heat, stir in brown sugar. Lay chicken breasts in baking dish. Spoon brown sugar mix over it. Bake 20-30 minutes (varies depending on how thick your chicken is). Juices should run clear.
This was good, the flavor was mild but you could taste it. We might like a little more flavor so I might double the garlic/brown sugar mix, not sure. It was SO easy and fast, we'll have it again.
Oh - I'd read the tip about putting the garlic in a closed tupperware container and shaking the crap out of it - like 20-30 seconds. When you take the lid off the peel is off the garlic. It worked. I was really surprised but it worked.
