If you put the eating part up, when the dishwasher gets unloaded someone is going to have their grubby hands all up in the part that goes in your mouth.

Spoons and forks face up, so they don't get stuck together. knives go down so I don't get poked when I unload. Steak/sharp knives get washed by hand (and dried immediately). I do all the loading and unloading, so it's only my hands touching the eating surfaces- DH doesn't mind.
I mix them - tall stuff goes in a special bin meant for them but eating utensils are mixed among the "bins" and mixed as to up and down - that's what the user's manual called for. Steak and small sharp knives have a special holder, blade down.

Everything down, because I know a couple people who have fallen on a dishwasher (totally random, who falls on dishwashers?). Knives and forks would suck to fall on. Also, I like to only touch the handle when putting away.

Sharp knives don't go in the dishwasher. I load the other silverware business side up to get it cleaner. DH loads it business side down... presumably because he is lazy.
Everything goes in with the eating surface down because I don't want to touch the clean eating surface when they come out. They get clean, so I don't get the argument that they get cleaner with the surface up.

Everything down. There was a story in the newspaper here about ten years ago about a three year old who tripped and landed on a knife, punctured his heart and died. Did I mention I was 8 months pregnant when I read that story?

Right now we have a dishwasher with little utensil slots, so everything goes up. I HATE IT. There's no way to avoid touching the eating surface when unloading. I'm going to remove the utensil slots. Previously, everything went in facing down.
Eating surface down, so you don't touch the clean flatware, except for utter knives, because the handles are heavy enough to theoretically break our everyday china if they hit it, and I can't afford to replace our dishes.

I do a mix of both - that way I can fit more in the utensil holder but not have them totally touching and thus not get as clean as needed. I can easily grab them w/o touching the clean useable surface in either direction so it doesn't matter.

I'm the outlier. Eating surfaces down. They get more direct water pressure that way, and you don't stab yourself and get your grubby hands all over the eating surfaces when you take them out.
