We have our retirement savings in target date mutual funds (within IRAs) with Vanguard. It takes the guesswork out of investing and the fees are extremely low.

Our Roth's are target date funds. For H's 401k (I have a pension) I did some research to find out what mix (large/mid/small/foreign funds and stocks/bond ratio) we were comfortable with. From there, we picked the funds in each category that had the highest Morningstar ratings. It wasn't too much work because he only has 2 or 3 options in each category. H's 401k website has links to all of that information for each fund.
