I've never been, but I've heard good things about Club Med Sandpiper key resort in Florida.... Disney would be great to take your daughter to at that age! and all of the Disney hotels have really nice pools, so you could relax and hang out by the pool for a day or 2 also. You don't have to go into the Disney parks every day.
I think you need to decide if you want to do beach or Disney. The average high in Orlando in dec is 72 which is not really beach weather. You'll have to go further south in December than Disney area if going to the brag is more of a priority.

Agree with PP. there are beaches not too far from Disney, but it could be 50 degree weather. You have to go further south, like The Keys, to guarantee beach weather.

Would you be able to travel to a US territory? If so you could visit the US Virgin Islands or Puerto Rico. I have been to central FL in December and it was definitely NOT warm nor was it beach or pool weather. If you wanted to stay in FL what about Key West?
