I am in charge of my mom's finances (long story) and she found a deal for airfare, six nights hotel, and rental car for $799. I want to try and figure out how extra meals and gas would be. I don't think breakfast at the hotels is included, as this is a package where you can add that along with a few other things. Hotels are in Dublin, Kilkenny, Limerick, and Killarney. I'm guessing middle of the road places for meal expenses and limited booze. TIA for any insight.

It'll depend a lot on where she eats. I'd budget about 45 Euro a day for meals, and that'll be middle of the road average. Gas...she'll maybe have to fill up twice (but the 2nd time might only be a top off) and I"m not sure of petrol prices in Ireland right now, but I think we paid about 60 Euros in a small car to fill it up a few years ago. Not sure how helpful this all is, but there you go!
If the rental is diesel, I'd say that she'll have to fill up twice and I'd budget about €40-50 per fill, depending on the size of the car's engine. If she get a petrol car, budget for 3 fills at about the same price. You are looking at about €1.50/L, with diesel getting MUCH better gas mileage than petrol.
For meals, I'd go at least €50/day. Alcohol is expensive in the Republic. A beer is about €5, wine a bit more.
Check on the breakfast though. If she is staying in hotels, like Jury's, it will be extra, but if she doing a B&B tour, then, obviously, she'll get breakfast.
