Where I am uncertain is in adding the backsplash on the sides of the wall. The granite extends out on the edges, but I don't know if it will look weird? Especially with the wall next to the pantry, if we have tile going to the edge of the granite, there's just going to be a strip of wall next to the doorframe. That will look stupid, right?
right, but you have that granite edge that goes all the way around onto the sides, so in my mind the tile should go where you have the granite. it would be weird to have the tile stop at the corner and the granite continue
If you just do the back wall, which I think would look best, I would pull out those granite pieces on the wall. I think it will look more streamlined and not as choppy. The granite half up the wall looks more like a bathroom, less like a kitchen.
Along the entire length? This is a good idea. I think I would prefer that look more overall.
Wherever you have the existing marble (granite?) backsplash, I would put the tile over it as well. Cap the ends with a trim piece like someone else showed above. It's going to look really nice.
I'm struggling to pick a backsplash tile right now myself.
My kitchen has a similar issue. Our tile guy stopped the tile at the counter. There is about 2 inches between the tile and the door frame. It looks fine. I think if it went all the way to the door it would look really weird.
Okay, I've emailed the woman who's going to install our backsplash. H is concerned what the drywall will look like on the sides if we remove the granite - and, of course, the additional cost. It will probably triple, and we may put it off for a few months. But now that I know how I want it to look, I'm going to be unhappy with it any other way. FWP, I guess.

I would remove the 3" granite splash and use the tile as the whole backsplash. I would also extend the tile to even with the edge of the granite either with matching bullnose if that tile collection has it, or by using Schluter edging.
I'm not a huge fan of Schluter but our tile didn't have a bullnose piece so we used it and it fades in, you really don't notice it.
ETA: we used that Tao tile in toffee in our last kitchen reno. Loved it!
