We will most likely be staying in the following Belgian cities:
Brussels, Gent, and Brugge
Does anyone have any hotel recommendations? Our budget is not set at this point, but we are willing to spend average to above average depending on the location and hotel.
We stayed at the Sofitel in Brugges and loved it - you could walk from the train station and walk everywhere easily. We stayed at the Novotel Brussels off Grand'Place and it was great, also walkable to everywhere you would want to go, including the train station, decent sized rooms. Both hotels were reasonably priced.

My husband and I also stayed at the Marriott in Brussels and had a very good stay (as pp mentioned location was terrific, only a block from the Grand Place). In Brugge we stayed at the Hotel Patritius which I would also recommend. It was family run and located in a building from the early 19th century.
In Brussels, we stayed at the Novotel. Very close to the train station, not far from Grand Palace. There is a waffle station right outside the hotel that I may have eaten at twice in one day :-)

That is where we stayed and I did the same things.

We just go back from Belgium a few days ago, and we stayed in this apartment right in the central part of town. We had an amazing stay, and the place is walking distance to almost everywhere in Brussels. I know you didn't ask for apartments, but I thought I'd throw it out there. The price and location were right and the owner was great to deal with.
I'm a little late, but in Brugge I'd recommend Jan Brito as a good choice-- location is close to the canals and 'downtown', but it's set a couple blocks back right near a park, very nice in the mornings.
