Last week's plan got all messed up because we went to Melbourne on Friday and got stuck there due to flooded roads and then our gas bottle was empty so I couldn't use my stove/oven. So I have reused several of those meals for the plan through July 4. DH is on school holidays for the next three weeks, so I have to plan meals for Tuesday nights.
Monday: do-it-yourself dinner Tuesday: Spicy Tex-Mex Bowl with roasted tomato salsa and homemade tortilla chips (V) Wednesday: Chicken Marsala over egg noodles with baked spinach Thursday: Roasted Pumpkin and Chickpeas with Simple Risotto (V) Friday: Polenta Beef Stew with green salads and crusty bread Saturday: Noodles Romano with Mixed Berry Clafouti (V) Sunday: Chicken Noodle Soup with Challah Monday: do-it-yourself dinner Tuesday: Lentil Burgers on Challah with corn on the cob (V) Wednesday: -out for July 4th-
Sunday - baked eggs with basil and mozzarella, toast Monday - soy-chorizo-stuffed poblano peppers with pepper jack and salsa, habanero black beans Tuesday - homemade pizza Wednesday - Indian food (naan, chana masala and samosas, I think) Thursday - Orzo with homemade pesto and sundried tomatoes, side salad with radishes from FIL's garden Friday - Veggie stir fry over rice noodles, cucumber, carrot and avocado spring rolls with dijon-soy dipping sauce (www.williams-sonoma.com/recipe/cucumber-and-avocado-summer-rolls-with-mustard-soy-sauce.html) Saturday - picnic at the movies - brie and some other cheese with crackers, 5 layer dip with tortilla chips, lemon bars, wine

m: goat cheese & sundried tomato stuffed grilled chicken, roasted broccoli, cauliflower, sweet potatoes, creamed spinach t: local restaurant. i will get the rack of lamb, b/c i'm obsessed and have to have it at least once a month. w: french toast, scrambled eggs r: fish (salmon for h, tilapia for me,) roasted balsamic asparagus topped w/ goat cheese, stuffed tomatoes f: ?
Sunday - Picnic at a friends. We brought mac and cheese muffins Monday - Mahi Mahi Tacos with spicy black beans Tuesday - Lemon Linguini with homemade ciabatta Wednesday - Pizza Margharita Thursday - Shrimp Scampi over a green salad Friday - Dinner out Saturday - Birthday party. We've been asked to bring an appetizer probably deviled eggs.
