Monday - L and the kids cooked dinner: pistachio crusted chicken, Parmesan zucchini crisps, and thai rice (getting the kids to help cook, is really helping them try new foods - even Carter who HATES to try new foods!)
Tuesday - L is going to her class at the gym, so I'll do something easy for the kids. Pasta?
Wednesday - Macadamia crusted tilapia and whatever veggie we have in the freezer
Thursday - Hopefully, I'll be home early to make turkey veggie chili
