This won't use much of it (I highly recommend cutting the recipe at least in half, if not a third) but this dressing is SO yummy. It's great as a chip or veggie dip and amazing on grilled chicken salads.

No suggestions that haven't already been given, but I stopped buying buttermilk awhile back, unless I need a lot of it, because like you, I'd be trying to figure out what to do with it without it going to waste.
I add a tablespoon of lemon juice or vinegar to one cup of milk. Occasionally, I'll buy the powdered buttermilk sold in the baking aisle.
