After five years I lapsed, mainly due to a lack of strong convictions, but the smell of a freshly caught trout simmering in garlic certainly didn't help matters. I thought it was a one-off but then Thanksgiving rolled around and I never looked back.
I still eat vegetarian about 90% of the time but sometimes you can't beat sushi or a nice steak.
Short answer: I got married, and my then-husband wasn't a vegetarian. He didn't mind going meat-free sometimes, but wasn't going to give it up for good. So we compromised and went white-meat only at home. He was happy eating red meat when we went out to eat (otherwise, we did a lot of ground turkey, turkey sausage, etc). Then about 4 years into our marriage I started marathon training and started to crave red meat. We stayed white-meat-only at home, but I ate the occasional steak at restaurants.
Different husband now, but we still only eat red meat at home on occasion (maybe once a week or less?). We eat meat-free a lot of nights -- maybe 4 or 5 nights a week? We do eat a little bit more meat in the summer because H loves to grill.
I was never a super healthy vegetarian (meaning I ate a ton of carbs), I don't like cooking, and I lived in a small WI town w/ few vegetarian options. I added meat in for more variety.

I met DH. He was a huge meat eater and it looked and smelled good. I had iron problems, mainly because my version of being a vegetarian consisted of fries, rice, pasta and some tofu.
Also I went to his parents' house for dinner once a week. She could not understand vegetarians at all. I usually just ate the other stuff that wasn't meet at people's houses, but DH told his mom I was a veg. So she made stuff on purpose that she thought I could eat, like turkey.
