So, I'm making a thai chili lime cashew salmon fillet for dinner tonight..I'm also going to make a cucumber, tomato avocado salad with a lime vinaigrette. I need one more thing... any ideas?
I'm not against a starch, but everything I think of seems to heavy to go with the other things...

If you want something more fun than just plain rice you could do a little rice cake. Cook up some rice, mix in some seasoning (garlic, ginger, whatever) and some rice wine vinegar and pack it into balls. Stick 'em in the fridge for a bit, and then sear them into little rice patties with a crispy top and bottom.
if you want to use brown rice you're going to have a hell of a time getting them to stay together (it works best with short grain sticky rice) but it'll still kinda work if you just coax them all to stay in a pile.

I made chili lime salmon the other night and served it with sauteed spinach and roasted potatoes and onions (but I also have to make sure my foods are what the 3 year old will eat).

Adding an egg and maybe a tablespoon of flour might help to bind the wheat rice together.
