DS turns two on Thursday. I spoke with tree director and I'm allowed to bring in a test for his class. Can be store-bought or homemade as long as it is peanut-free (no one in the school has a peanut allergy, it's just a precaution for the future). No one in his class had any food allergies.
What would be easy to make and transport? S.O. already had his hands full in the morning trying to get himself, his lunch, DS and DS daycare backpack out the door in the morning.

For 2 year olds, I've done mini cupcakes made in my mini muffin tins. I also sent some regular size ones for the teachers. The teachers were so grateful they were small because it was just enough sweet treat for that age without being too much sugar. I've also done rice krispie treats, but that was for my older DD who doesn't really like cake, cupcakes, cookies, etc. Not sure if a two year old can munch a rice krispie treat.
I plan to do mini-cupcakes. The bakery packs them for us so it is easy enough to transport. If that isn't an option I'd just go chocolate chip cookies.
You could just do muffins instead of cupcakes, so you don't have to deal with frosting (maybe something like chocolate chip muffins). I'm not sure of the age group in his class, but maybe even plain sugar cookies and you could send a little frosting for them to decorate their own cookie or something. SK's brownie roll-outs are also really good/easy and will transport very easily. You can cut them into fun shapes.

This is what DD #1 did in kindergarten. Muffins were her favorite food at the time, and she specifically asked me to make them as her birthday treat. Bonus that they were so easy to transport! Rice Krispy treats work well, too (you can jazz them up with M&Ms, Oreo pieces, make them with flavored Cheerios instead of RKs, etc.).
This doesn't help if you are looking for something edible, but I'm sending mini playdoh containers with leftover stickers from her birthday party (I made them with her name to go with the theme). We can only send purchased food with an ingredient label, so I just skip the sugar.
If he can't carry a box of mini cupcakes (I have a carrier with a handle for a sheet cake/cupcakes/mini cupcakes, or I line a box with foil), then I would just send cookies. I always make a No Fail Sugar Cookie with glace icing for the goody bags, and the kids like that. They stack really well too after they dry overnight. These were my first attempt for DD1's three-year-old party, so excuse the crooked icing, but they were fun.
What's the recipe? I always love new royal icing recipes!
