The popups are fairly reliable, but I use my own since I take it out a bit before it's done and let it finish cooking while sitting out. That helps it not get too dried out.

We always use our own. We have the kind you just stick in the bird and it has the cord that attaches to the display outside the oven. We set the alarm to go off at the right temp and then take it out.
Related story, apparently my H ripped out the "worthless pop-up" from our turkey when he started the dry brine and I didn't even notice it was gone when I put it in the oven.
