You can sub Old Cheddar for the Gruyere, but it is really good when you use what's called for. I usually skip the toasting of the panko step. I also cut my squash up into pretty small cubes to speed up cooking time. The rest of the squash usually goes towards soup for the next day.

Thanks! this is perfect. I have cubed butternut squash in the freezer that we need to use up.
Monday - chili dogs, some sort of veggie, and fries (I need to use up some leftover chili) Tuesday - Wednesday - DH is out of town so I'll do quick and easy stuff for E and myself Thursday - Spaghetti, salad, garlic bread Friday - Saturday - DH is OOT, so again it'll be easy meals Sunday - Pasta e Fagioli soup or some other soup in the crockpot

Mon/Tues: Roasted chicken sausage with red potatoes, carrots, onion, based off this recipe Wed: take out pizza Thurs/Fri: slow cooker meatballs with spaghetti and marinara Sat: Christmas party Sun: roasted sweet potatoes and mahi mahi, probably some steamed veggie
Sun- meatball subs Mon/Tues- white bean chicken chili Wed/Thurs- meatloaf, rice and veggies Fri- crock pot BBQ pork sandwich's, baked steak fries, steamed veggies Sat- leftover pork if we are home, probably in the form of pork tacos
