Thank you! DH used to get these at a restaurant at the last place we lived but so far no one here makes them like he's used to. I'm going to add this to my list of recipes to try I don't know why I never thought to try and make them myself.

To me, chilaquiles always needs a fried egg on top. I don't have a specific recipe, but this is how we do it. I live on the border of Mexico and we know good Mexican food
First, quarter corn tortillas and bake or fry them until they are crisp. Then cook the tortillas in a sauce. We usually do a red sauce that we make from El Pato (spicy Mexican tomato sauce) and whatever chiles we have around the house. Put the tortilla/sauce mixture on a plate and top with a fried egg. So yummy and easy.
