Soft Ginger Cookies Ingredients • 2 ¼ C. flour • 2 t. ground ginger • 1 t. baking soda • ¾ t. cinnamon • ¼ t. ground cloves • ¼ t. salt • ¾ C. butter, at room temperature • 1 C. white sugar • 1 egg • ¼ C. molasses • ¼ C. sugar (for rolling)
Directions: Combine flour, ginger, soda, cinnamon, cloves, and salt, then set aside. Beat butter for 30 seconds, until soft. Add sugar and beat until fluffy. Add egg and molasses and beat well. Add ½ the flour mixture and stir in, then stir in the rest of the flour mixture. The dough should be at a consistency that you can roll it with your hands into balls – you might have to add a bit more flour. Roll into 1-inch balls, then roll the balls in sugar. Place cookies two inches apart on an ungreased cookie sheet and bake at 350 degrees for 8-12 minutes. Do not brown! The cookies should be almost underbaked in the middle. Let cool for two minutes, then transfer to a cooling rack. Makes 3 dozen delicious cookies
Could you leave the sugar off the outside? I am not a fan of that. They sound delicious!

I don't use this exact recipe, but I use a couple of similar ones. I roll them in sugar when I'm making them for someone, but most of the time I'm too lazy. It doesn't make a huge difference.
