I edited my answer because I didn't really read your question well enough. Yeah - it's only unlimited talk/text. You have to pick a set amount of data.

Not sure if they have any plans that aren't unlimited talk/text. The access rate is like $40 for a smart phone and I think $30 for a regular phone and then you add on the data package.
Not for smart phones anymore. If you want all non-internet based phones they do still have a limited text/minutes plan. I hate the new set=up personally. =0( We use more data and texting than minutes.
That said, DH and I share a 4gb plan, and don't go over. If we'd be more consistent, I'd say most of the time we could share a 2gb plan. It helps that we can connect to wi-fi both at work and home, so we aren't using the data that much.

We have verizon - and only 500 shared minutes. I think we use 40 shared minutes max a month. We've had them forever though. You might have to call and see if these plans still exist to new customers.
Data wise you should be fine. We went with 2GB each (Not a shared 4GB as it was cheaper this way for us).
FWIW, their customer service is always fantastic with us. when we lived in separate states for a while, we went over our minutes the first month and I called them and they changed my plan and gave me that plan for the previous month so my minutes weren't used and credit to my account.
They are always really good with us and crediting us when I realize life has changed and am behind in changing our plan.
ETA: I lie, we share 550 minutes. We've used 3 this month.
