No, it sits out all month as decoration. Then it gets tossed.
Or it gets boxed up and kept and pulled out year after year. I made one in 2006 and it lasted until last Christmas. I made a "model" of our house, and we had just replaced the painted shingles with stained shingles and it was gingerbread-colored. I even had our skylight and box windows on it! A couple of the seams had failed over the years but I hot-glued them; when it finally totally collapsed one year while it was in storage, I gave up and tossed it. I still miss it, though, but not enough to make another one!

Yes. I mean rarely anything but the candy because I hate royal icing, but otherwise it's all game. My mum and her pals make them the weekend before Christmas.

That looks great!
We never ate ours as kids, I don't think the frosting was edible. Daisy is insistent that she gets to eat hers this year ( we leave in less than a week and just made one tonight.) I made it all from scratch with baked graham crackers instead of gingerbread and royal icing, but I still won't eat it, and I am sure Daisy will change her mind.
