Um, awesome! I'm always looking for quick dinners (we eat our bigger meal for lunch b/c it works better for evening workouts), so I stocked up on supplies this weekend at the grocery store and baked a package of chicken breasts so everything was ready to go.
On Monday night we had Oriental style - chicken, bean sprouts, scrambled egg, thai peanut sauce -- yum! Then last night, Southwestern - chicken, black beans, salsa, a little cheese, avocado, bell pepper. DH added ff sour cream. This one was a real winner! Sooo good.
I'm thinking I could do a Greek bowl with feta and spinach. Maybe next week.
Anyway, thanks kams for the great idea. I can ride this wave for probably 3 or 4 months before we get tired of it.
