We were there in March and visited the market in Cours Salaya one morning. Grabbed a few souvenir type things - plus a loaf of bread and some cheese for our afternoon in Castle Hill. Castle Hill is pretty much at the end of the promenade - we just wandered around taking in the scenery and sitting in one of the parks to have our snack.

We rented a car and drove to Eze which was very cool in its own right and then had a fabulous meal on the side of the mountain. Not cheap, but amazing. www.chateaueza.com/images
We'd originally had plans to also go to St Paul du Vence on the way back (we were in Cannes) but ran out of time.
I'd just hang out in Nice eating, drinking, and walking around! I loved Nice. Although I will admit the local towns are great, too. Make sure to hit up Monaco for a day!
H and I go to Cannes every year for Easter. Besides eating and staring at expensive cars, there's also the Oceanography Museum in Monaco, it's really nice, especially the aquariums. Walk around the old city, where the museum is located also. Take a day trip to Cannes and visit the markets and old town. There's also Marineland, but I've heard mixed reviews on it.
Also consider taking the train out for a day to Aix-en-Provence or Avignon.
